Tomato & Cheese Risotto

Your kids will love this 1 pan cheesy baked risotto

Ingredients

(must be available to buy in-store and online) 

  • 1 tbsp olive oil
  • 1 onion
  • 2 cloves garlic
  • 250g cherry tomatoes
  • 200g risotto rice
  • 2 ½ cups vegetable stock
  • ½ cup Community Co Shredded Tasty cheese
  • Basil to garnish

How to make

  1. Preheat the oven to 200C
  2. Finely dice onion
  3. Add oil, garlic, onion and tomatoes into a baking pan. Bake for 15 mins
  4. Carefully remove the dish from the over. Add uncooked rice and stock and put back in for 20 mins, stirring halfway through
  5. Finley chop chives
  6. Remove from oven and stir in cheese
  7. Serve with a side salad
