Your kids will love this 1 pan cheesy baked risotto

Ingredients
(must be available to buy in-store and online)Â
- 1 tbsp olive oil
- 1 onion
- 2 cloves garlic
- 250g cherry tomatoes
- 200g risotto rice
- 2 ½ cups vegetable stock
- ½ cup Community Co Shredded Tasty cheese
- Basil to garnish
How to make
- Preheat the oven to 200C
- Finely dice onion
- Add oil, garlic, onion and tomatoes into a baking pan. Bake for 15 mins
- Carefully remove the dish from the over. Add uncooked rice and stock and put back in for 20 mins, stirring halfway through
- Finley chop chives
- Remove from oven and stir in cheese
- Serve with a side salad
